A pancake is a circular, flat and slightly sweet pastry item which often cover with maple syrup before eating. Pancakes are most commonly eaten at breakfast, though they can be eaten anytime of the day. I love my pancakes to be thick and fluffy instead of thin and silky like French crepes.
The origin of pancakes can be traced back to the 17th century Dutch settlers. Pancakes come in numerous variations, mainly depending on the region in which they are made. For instance, in France, Brazil and Canada, pancakes are referred to as crepes and are made using flour, eggs and milk and then served with some savory or sweet filling. Pancakes in the Netherlands are larger in diameter and are served with fillings such as cheese, sliced apples, ham and bacon. Pancakes may also be prepared with a variety of ingredients including blueberries, cinnamon and chocolate chip to produce variations that are rich in flavour.
Today, I've added fresh fruits and chocolate sauce to enhance the flavour of my pancakes. Strawberries are examples of popular pancake ingredients. In Australia, they do like to add-on the fried bacon on it. Salty bacon match with sweet pancakes, indeed delicious.

Hankerie's Pancake recipe:
- 3 large eggs
- 115g plain flour
- 1 heaped tsp baking powder
- 140ml milk
- A pinch of salt
- Fresh cut fruits
- maple syrup & chocolate sauce
Method:
Sieve the flour and baking powder. Mix in the milk, eggs and yolk until smooth batter. Heat a good non-stick pan on a medium heat. Pour the batter into frying pan, continue frying until golden brown. Put the fruits toppings, maple syrup & chocolate sauce before serving.
Best serve with a cup of coffee to start up brand new day!
